The giant all-rounder will take charge on the field in place of Jason Gallian who remains club captain and continues as captain during first class matches.
Notts Director of Cricket Mick Newell said: "We did not play well in one-day competitions last season and I felt there was a case for changing the leadership of that team.
"In Chris we have one of the best limited-overs players in the world who has nearly 200 one-day internationals under his belt and I think he will lead the team by setting an excellent example with his batting, bowling and fielding.
"I've discussed it with Jason who has accepted the decision and remains as club and four-day skipper as well as staying involved in selecting the one-day team."
Said Cairns: "It's a real honour for me to take on this role and it's great that Mick has the faith to ask me to do it.
"While I don't have a great deal of experience as a captain, I have skippered New Zealand on a couple of occasions and I can bring the experience from being around in international cricket for 14 years to the job.
"Captaincy is something I've always had ambitions to do for my country but with a guy like Stephen Fleming around the opportunity has never come up so I'm really looking forward to this chance at Notts."
Said Gallian: "Our performances in one-day cricket were not up to scratch last season and a change was needed. Having had time to think it through I can see how important putting Chris in charge could be for the team's sake.
"He is a terrific cricketer and I'm sure I can learn from seeing how he operates. As for me as a one-day player, it presents a new challenge for me as it puts me back in the mixer, but rest assured I'll be striving to make the teamsheet as often as possible."
